Characterization of Brazilian Syrah winter wines at bottling and after ageing

Double pruning extended the harvest season of wine grape (Vitis vinifera L.) to dry winter, enabling production high quality wines in southeastern Brazil. Winter allows grapes fulfill not only technological maturation, but also phenolic ripeness. from Syrah harvested eight vineyards Brazil during three harvests were analyzed for their chemical and aromatic composition after bottling ageing 20, 30, 42 months bottle. have content total compounds, which remained almost constant through ageing, as well color intensity. Malvidin 3-O-glucoside stood out among anthocyanins, remaining 5-10 % 39 ageing. Moreover, malvidin 3-O-glucoside-pyruvic acid was main pyranoanthocyanin identified winter wine. Polymerized pigments index ranged 54 at 80 Young are rich ester monoterpene, alcoholic volatile compounds responsible ethereal, fruity, flowery, fresh sweet aromas. Aged showed higher contents furfural, geranyl ethyl ether, isoamyl decanoate, α-muurolene α-calacorene, contributing sweet, fruity woody characterized by stability, keep good sensorial characteristics
